RECIPE: SALMON EGG BITES
Recipe: Salmon Egg Bites
There is nothing like having something tasty (and healthy) on hand to hold you over to the next meal when you are hungry!
Though not very “French,” snacking sometimes can not be avoided. And, if you are extremely hungry and can’t get to a proper meal, well your blood sugar has probably already started dropping and let’s not talk about who you become when you’re “hangry!”
This is why, I much rather you have something accessible that is not only tasty but healthy. You need something that is not going to deplete your energy, like sugar and processed foods. So, this is why I suggest, Salmon Egg Bites! They are one of my favorites to have on hand.
Best of all, you can batch cook them! You know how much I love batch cooking (versus meal prepping)!
So, I am sharing with you this home run of a snack in hopes that you don’t just bookmark it, but actually take action this week and have some on deck, because you know that moment is coming when you need to grab something quick to satiate your hunger! Now, you get to choose, junky food, or delicious, nourishing foods that tell your body— I love and hold you in the highest regard. (I know that sounds a bit dramatic, but that is absolutely the way it should be, you should hold the highest standards for the food you eat!)
INGREDIENTS:
1.5 tsps avocado oil
6 eggs (FRCF: Free Range, Cage Free)
1 tbsp chives (chopped)
1 cup baby spinach (chopped)
4 oz. smoked salmon (rough chop)
sea salt and freshly ground black pepper (to taste)
METHOD:
Preheat your oven to 350℉ (177 ℃) and lightly oil a muffin tin with the avocado oil
In a mixing bowl, whisk together the: eggs, chives, salt and pepper
Once combined fold in the spinach and salmon, gently. Be sure not to whisk, but incorporate by folding the ingredients into the whisked mixture
Transfer mixture to muffin tin. (I transfer the mixture from the mixing bowl to a container with a spout, which makes it easier to pour into the muffin tin without a mess)
Be certain not to fill the muffin tin to the top, as the eggs will rise
Place tin in the oven for 10-20 minutes. (You are looking for the eggs to be cooked. The time will vary based on your oven
Remove the tin from the oven once the egg bites are cooked. Be sure to remove the bites from the tin. If you allow them to stay in the muffin tin they will continue to cook will overcook and potentially burn
